Peanut Butter & Chocolate Energy Bites

This recipe made me 15 snack-sized energy balls, but they can vary depending on how big or small you want.
Ingredients:
-40g oats (I blended these down in a blender first)
-40g protein powder or a powdered peanut butter, e.g. PB2, or if you don't have either, you can simply use another 40g of oats
-140g peanut butter
-90g dark chocolate chips
-120mls of a liquid sweetener, e.g., honey, maple syrup or a low-calorie alternative, e.g., this Madhava agave syrup I used
-25g milled linseed/flaxseed
Method:
Blend down the oats in a blender until they resemble fine dust. Then basically mix all the remaining ingredients. I like to leave the mixture in the fridge for 30 minutes before using your hands to roll it up into treat-size balls. This makes it a little less sticky when rolling. Then, set in the fridge for 1-2 hours before eating (if you can resist). Store in an airtight container in the refrigerator for up to one week. You can also double the recipe, make a big batch, and store them in the freezer.
