On-The-Go Omelette - High Protein Breakfast Recipe

This is an easy on-the-go breakfast recipe. It is high in protein which will help keep you full until lunchtime. No fancy ingredients are required, and can be made in under five minutes.

  • 2 eggs

  • 1/4 cup milk of choice

  • 1/4 cup spinach, diced

  • 1/4 cup mushroom, diced

  • Optional: 1 tbsp goat or feta cheese

  • Salt and pepper to taste


  • Add ingredients into a bowl or on-the-go container and mix until well combined.

  • Microwave for 2-3 minutes until egg is cooked through

  • Top with additional cheese if desired, and enjoy!
