This is my go to recipe, easy to make and the ingredients are usually things we would all find in the press. Also it is slightly more filling than regular pancakes due to the oats and some protein from the eggs.
Ingredients for 2 servings (this makes 8 medium sized stackable pancakes): -2 whole eggs beaten -2 whole ripe bananas -1/2 cup or 40g of oats -1/2 tsp baking powder -1 pinch of salt
Method: -Blend the bananas, eggs, oats, baking powder & salt together. This can be done in a nutribullet, blender or food processor. Leave the batter to sit for a minimum of 20mins to thicken (Or make it tonight and have it ready for tomorrow!). -Heat a non-stick frying pan & grease lightly with an oil of your choosing. -Fry spoonfuls of the batter over a medium high heat. After a minute of cooking, flip each pancake and cook for a further minute. Grease the pan between pancakes as needed.
Stack and serve with lots of toppings!!! For me this will be greek yogurt, chocolate chips and berries with a drizzle of honey. Enjoy and let me know how it goes !
