Miso Salmon Bowl

INGREDIENTS;
2 salmon fillets (skin removed), cubed
Marinade:
1 tbsp white miso
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey
1 tbsp sesame oil
1 tsp ground ginger
Serving Suggestions:
Sushi Rice
Shaved carrot
Sliced cucumber
Edamame
Sliced avocado
Sauteed spinach with garlic
Garnish (optional):
chopped green onion/scallion
toasted white and black sesame seeds
DIRECTIONS:
Cook sushi rice as per packet instructions.
In a large bowl, mix the marinade ingredients and add the cubed salmon. Cover and keep in the refrigerator for 1-2 hours or overnight.
Heat some olive oil in a pan to medium heat and add the salmon and all the marinade. Cook until the salmon is thoroughly done.
In another pan, saute some spinach in olive oil until wilted. Add in some powdered garlic for extra flavour.
Add the sushi rice to your serving bowl, followed by the wilted spinach and miso salmon.
Add any additional toppings as desired.
Garnish with chopped scallion and toasted sesame seeds.
