This Mediterranean and avocado toast recipe is perfect for a weekend breakfast. (or weekday, really!) It's straightforward and quick to assemble and will satisfy you until lunchtime.

One slice of sourdough bread
1 tsp olive oil
1/2 avocado, mashed
1/4 cup arugula
1/4 cup chickpeas
1/4 cup cucumber, sliced
2 tbsp red onion, sliced
2 tbsp feta cheese
Salt & pepper to taste
Drizzle olive oil on sourdough bread and toast in a pan or toaster oven.
Top with mashed avocado, arugula, chickpeas, red onion, cucumber and feta cheese
Optional: Whisk about one tbsp of hummus with a small amount of water or milk to make a sauce; drizzle over toast and enjoy
Add an egg for additional protein. Serve with a side of berries or a piece of fruit for a boost of antioxidants
