Mediterranean Avocado Toast

This Mediterranean and avocado toast recipe is perfect for a weekend breakfast. (or weekday, really!) It's straightforward and quick to assemble and will satisfy you until lunchtime.

INGREDIENTS

  • One slice of sourdough bread

  • 1 tsp olive oil

  • 1/2 avocado, mashed

  • 1/4 cup arugula

  • 1/4 cup chickpeas

  • 1/4 cup cucumber, sliced

  • 2 tbsp red onion, sliced

  • 2 tbsp feta cheese

  • Optional: hummus

  • Salt & pepper to taste

DIRECTIONS

  1. Drizzle olive oil on sourdough bread and toast in a pan or toaster oven.

  2. Top with mashed avocado, arugula, chickpeas, red onion, cucumber and feta cheese

  3. Optional: Whisk about one tbsp of hummus with a small amount of water or milk to make a sauce; drizzle over toast and enjoy

Nutrition Tip:

Add an egg for additional protein. Serve with a side of berries or a piece of fruit for a boost of antioxidants
