Hummus Veggie Pasta
I highly recommend this recipe for anyone who needs a quick and easy midweek dinner option. It takes less than 15 minutes to make and is absolutely delicious! You won't have to sacrifice taste for convenience with this meal. Give it a try, and let me know what you think!

INGREDIENTS:
200g of chickpea or lentil pasta
1 tbsp olive oil
1 red pepper, sliced
200g cherry tomatoes, halved
200g mushrooms sliced
Two handfuls of spinach
200g hummus
1 tbsp tomato puree
Salt & pepper, to taste
Optional: red chilli flakes & coriander
DIRECTIONS:
Cook pasta according to package directions.
While pasta is cooking, heat olive oil in a pan on medium heat
Once hot, add tomatoes, peppers and mushrooms. Cook for 3-4 minutes, until veggies are tender.
Add spinach, cooked pasta, hummus, and tomato paste. Mix well.
Add a few tbsp of water if needed to thin out the sauce.
Serve, top with salt & pepper to taste and optional chilli flakes or coriander.
