Easy Baked Pears

Inspired by Registered Dietitian Paula Mee and the Mediterranean Mood Food Cookbook






Serves 4:

Ingredients: -4 ripe pears -Ricotta cheese -Ground cinnamon -Honeys for drizzling -2 Crushed dark chocolate digestives




Method

  1. Preheat the oven to 180 degrees

  2. Cut each pear in half, use a teaspoon to scoop out the centre and make a dip/well in each pear.

  3. Add 1-2 teaspoons of ricotta into each dip, sprinkle with cinnamon and drizzle with honey

  4. Roast the pears in the oven for ten minutes

  5. Remove and sprinkle over the digestives

  6. Return to the oven and roast for another ten minutes


Simple but delicious! This makes a quick and light dessert. Pears are rich in antioxidants which help us mop up free radicals in the body protecting our brain cells against disease.
