Banana Bread Muffins!

I LOVVVE this recipe. It's banana bread made into muffins, making it incredibly easy to have as an on-the-go snack. It does have sugar but not a considerable amount, and the rest of the ingredients are very healthy.

Ingredients:


Dry Ingredients:

  • 200g whole wheat flour

  • 60g light brown sugar

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 90g dark chocolate chips


Wet Ingredients

  • 2 large bananas mashed

  • 2 large eggs

  • 170ml milk of choice

  • 1 tsp vanilla extract

  • 2 tbsp coconut oil melted

Method:

  • First, preheat the oven to 350F (gas mark 4)and line a muffin tin with cupcake liners or spray with a cooking oil spray

  • Place the dry ingredients in a large bowl and mix them. If you can, sieve the wholewheat flour and baking soda (this introduces air-making for bouncier muffins)

  • Mash the 2 large bananas in another bowl until there are very few lumps. Crack in the two eggs and whisk. Add the milk and vanilla essence and whisk again. Use an electric hand whisk if you have one.

  • Combine the wet and dry ingredients until smooth.

  • Add in the coconut oil and mix again.

  • Transfer the batter to the muffin tin. Fill each one nearly to the top and add a few more chocolate chips.

  • Bake at 350F for 20-25 mins or until you do the toothpick test and it comes out clean.


(The toothpick test is when you insert a toothpick or a clean knife into the centre of the muffin, leave it for a few seconds and then pull it out. If it comes out clean, the muffins are cooked through. If there is still some wet mixture on the knife, place them back in the oven for another few minutes and try again).
