This is my go to recipe for all occasions that has been trialed and tested and never lets me down!
400g digestive biscuits
600g cream cheese
100g icing sugar
300mls double cream (whipped)
100g grated milk chocolate
To garnish: More grated chocolate or toppings of your choosing e.g. maltesers, chocolate buttons etc.
Melt the butter in a pan. Remove from the heat and add the crushed biscuits. Mix well until all the biscuits have absorbed the butter.
Press into the bottom of a 7inch springform LINED tin (lined with parchment paper). Place in the fridge and allow to set for one hour.
Lightly whip the cream cheese, baileys and icing sugar together.
Fold in the whipped cream and grated chocolate.
When smooth spoon evenly onto the biscuit base.
Refrigerate and allow to set for a further 2 hours.
Once set remove from the springform tin and decorate as desired.
